The origins of the Moraiolo cultivar date back to the times of Roman civilization, and it spread throughout central Italy starting from Umbria, whose climate—hot and dry in summer and cold in winter—made it perfectly compatible with the surrounding environment.

In fact, the Moraiolo plant suffers from water stagnation and humidity, which is why it is often found on even steep slopes where water runs off and does not accumulate.

A rustic plant, resistant to frost and also to attacks from the olive fly.

Ripening and Harvesting

Unlike other cultivars common in Umbria, Moraiolo has some peculiarities that make it special:

- it is a self-sterile plant and therefore requires pollination from other cultivars, such as Frantoio and Leccino;

- it has a late ripening cycle compared to other cultivars;

- it produces an oil with a strong flavor, with pronounced spicy notes and a pleasant bitterness associated with a ripe grass fruitiness.

In order to obtain a product of excellent quality, we harvested the olives in one day and milled them the following morning.

Analysis and Packaging

We sent a sample of our monovarietal to an ACCREDIA-certified analysis laboratory, which provided us with a test report showing values of absolute excellence, as can be seen from the data reported below.

We also had analyses carried out (so-called multiresidual analyses) that certify the total absence of chemical residues of any kind.
