Having the certainty that the oil produced comes from native olives (which is more important than ever at a time when even in Umbria there are intensive plantations using foreign, hybrid, and otherwise non-native cultivars) grown on land in the area (and therefore not imported from other regions or, worse, from abroad), being able to rely on strict compliance with the current regulations which require strict protocols regarding chemical parameters (free acidity, peroxides, polyphenols, etc.) and organoleptic evaluations by a Panel Test is undoubtedly a great achievement in terms of transparency and guarantee for the consumer.
In an increasingly globalized market, it is not enough to rely on the advice of friends or relatives, but it is necessary to be informed and demand that the quality of the oil used at the table is CERTIFIED according to international standards.
